Carbs.

I've been under the impression that we absorb 100% of our carb intake. Is that true?

 I think it's 100% sugar and like 80% carbs, but I am not 100% sure  :)

 Only absorb 60% of complex carbohydrates and 100% of simple carbohydrates.

Define complex carbs please. Any carb that is absorbed (ie - not fibre), turns to sugar in the body. So if sugar is absorbed at 100%, doesn't it stand to reason that we should assume that all absorbed carbs are absorbed 100%?

No it doesn't. That carbohydrates absorbed by the body turn to sugar in the body is basic biological fact. So why do carbs from "complex" sources not get absorbed in the same way as simple carbs and what is the definition of a complex source?

I have a DS. I've heard this a million times, but I've never heard a rational, science based reason for it.
